Solera

Coming Summer 2026

Inspired by a centuries-old aging and blending technique pioneered by Spanish sherry producers, Pelacañas presents SOLERA – a rum made from fresh-pressed sugarcane, aged and blended in a cascading four-tier system. We draw from the oldest tier, which becomes a new Edition, cascade each level downward, and refill the youngest with new make. 

The process began in the 2022-’23 season with the filling of the first tier. Pelacañas Llamarada (still strength) went into American white oak barrels previously used for whiskey. By the end of the ‘26 season, all four tiers were filled and ready for the first draw.

The first release, called Edition Zero, was a unique batch as it was made from a single vintage. This started the cascade and the forever mixing of the vintages. Each one is an evolution from the last, offering something new while drawing from the soul of every batch before.

INGREDIENTS – 100% freshly extracted sugar cane juice, brewers yeast, filtered well water

CANE – Morada, Colmex, Milagrosa

LOCATION – Ahualulco Valley with clay loam and volcanic soil

DISTILLERY – Hacienda el Carmen, Jalisco, MX

CRUSH – Brazilian mechanical sugar cane mill

FERMENTATION – 2-3 days in open top pine vats of 6000L

DISTILLATION – 2x, first in a stainless steel alembic & then in a copper pot to approximately 55% ABV

AGING – Four tier solera system with ex-bourbon barrels

Production Process

Sugarcane
The Ahualulco valley has a history of more than 300 years of sugarcane farming. Several varietals are used, with the most common being La Milagrosa, La Morada, La Colmex. It is all harvested by hand during the winter months, typically October to March.
Mill
This milling device comes from Brazil. It efficiently juices the sugarcane, which is channeled to a formulation tank a few yards away.
Ferment
Water and brewers yeast is added to the fresh sugarcane juice. The brix level and temperature are both monitored and adjusted as needed by adding more water until it is at an optimal point for fermentation. The mixture is moved to these 6000L pine fermentation tanks, where nature will take over for the next 2-3 days.
Distillation
Distillation is done first in a stainless steel pot still. Rectifying occurs in a copper alembic, typically between 52-56% ABV.
Aging & Blending
Pelacañas Solera consists of four tiers of ex-bourbon barrels, with the first being filled in the 2022-'23 production cycle. Bottling occurs from Tier 1, which is the 'oldest' liquid. Only a partial draw is done and the empty space is filled by cascading rum, tier by tier. Tier 4 is topped off with new make (Llamarada).
