- 2 oz Pelacañas Blanco
- 1 oz Small Hands Food Passion Fruit Syrup
- 1 oz Fresh Lime Juice

Preparation – Shake all of the ingredients until properly chilled and strain into a coupe glass. Garnish with an edible flower or a lime wheel.
Ron Pelacañas is a charismatic and flexible rum for all kinds of cocktails. This twist on the classic daiquiri is tropical, delicious, and easily adjustable to match your preferences.
It’s also a perfect base for your own creativity. Add bitters or a liqueur. Try a seasonal syrup made with local ingredients. Swap out the Blanco for Pelacañas Llamarada. It’s hard to go wrong!

Bienvenido Fernandez - Maestro of the Sierra
Spending time in this cooler mountainous region of Chihuahua brought perspective to how well Parejo captures the terroir of the different regions of this vast state. We were also grateful for the delicate warmth of Bienve`s delicious sotol as we waited for a winter storm to come in from the north.
We admired the ongoing pursuit of excellence seen in the making of his sotol. For example, he has created two new fermentation pits, dug into the earth and lined with wood. This older technique requires more work than purchasing a fermentation tank made of modern materials, but it contributes to the overall quality of the sotol, something he knows and we appreciate.

Juan Fernandez - Master of the Agave
Juan makes Lechuguilla from several types of agave found in the sierra around the city of Madera. He also makes Sotol, as well as Ensambles of the two.
He brought his granddaughter along as we got a tour of his vinata, which is just a few minute away from his brother`s vinata in the city of Madera. His vinata is not currently operating, but has the potential to produce again.

The Three Wise Men - On our recent trip to Chihuahua we got to spend real quality time with the people of @SotolParejo In this photo we see #HermanosArrieta sharing a warm moment with Don Beto, on of Parejo`s founders.
Don Chuy is the #MaestroVinatero and head chef. It was great to hear him tell stories of their family with our bellies filled with #barbacoa and #sotol.
Don Mario is the #MaestroTumbador, harvester. It was a special treat to be in the #Aldama wilderness with him, learn about the plants and watch him "tumble" the sotol.

Over the years we have had many conversations about how to tell the different species of the sotol plant (Dasylirion). Here we see leiophyllum from Aldama, Chihuahua. The thorns, called espinas, point down to protect the plant from small animals, the common threat to the plant in this region. This is contrasting to wheeleri found in Madera, where the espinas point up to protect the plant against larger animals.

One of our favorite cocktails from a recent series of pop ups we held with @verna_nashville. @beau_gaultier and @cameroonski_ created this old fashioned riff using @mi_casa_single_estate_tequila and @maiznation. It’s delicate and complex, a beautiful combination of tequila and whiskey.
1oz Whiskey Maíz Nation Blanco
1oz Tequila Mi Casa Blanco
.25oz Salted Bay Leaf Simple
2dash @elguapobitters Crawfish Boil Bitters
*To make the bay leaf simple - combine 500g water and 500g sugar with 10 bay leaves. Slowly bring to a simmer and remove from heat, stirring to dissolve the sugar. Let steep for at least 15 minutes.
