Just like St. Paul & The Broken Bones, this micro-batch of sotol is truly one of a kind. With only 104 bottles made, we invite you to listen, sip and celebrate with us.
SOTOL is a Mexican spirit made from the sotol plant. Traditional sotol like Parejo are made with ancestral practices – think mezcal but not agave!
PAREJO is Co-founded by Jorge Caldera who is dedicated to bringing together the finest producers of Chihuahuan spirits.
MAESTRO VINATERO – Chuy Arrieta, 4th generation
PLANT – 100% wild Dasylirion Cedrosanum (the sotol plant)
VINATA – Aldama, Chihuahua, MX
CLIMATE – Extremely arid, little precipitation, elevation 3,800’
PLANT MATURITY – Madurado en verde 15 years
ROAST – 5 days in a custom pit oven with poplar wood fuel, covered with volcanic stone
CRUSH – Mechanical
WILD FERMENTATION – 7 days with ambient yeast in wood
DISTILLATION – Slowly distilled 2x in a wood fired copper pot still
ADJUSTMENT METHOD – With colas & well water until it is parejo
TASTING NOTES –
AROMA – Baking spice, orange peel, wormwood
TASTE – Vanilla, lemon leaf, pasilla chile
